Cheddar and Bacon Muffins
1 lb. bacon (2 cups of real bacon bits) 2 T sugar ½ c chopped red onion 2 Large eggs 1t salt 1 ½ c milk 1t pepper 3 T yellow mustard 3c all-purpose flour 3 T cooking oil 2t baking powder 2 c shredded cheddar cheese 1t baking soda COMBINE flour, baking soda, baking powder, sugar, salt and pepper; stir well COMBINE eggs, milk, mustard, oil and onion; Mix well and add to dry ingredients, stirring until moistened. Stir in cheese and bacon. SPOON batter into greased muffin pans. BAKE at 375° for 20 minutes or until wooden pick inserted in center comes out clean. Remove from pans immediately, and cool on wire rack. Should yield 1 ½ dozen to 2 dozen Pull-Apart Bacon Bread 1/3 cup REAL bacon bits 2 cans prepared biscuit dough 2 T cooking oil 1 cup shredded mozzarella cheese 1 (1 oz.) package ranch salad dressing mix CUT biscuits in fours using a pizza cutter; toss with oil, bacon, dressing mix, cheese. PLACE 4 or 5 per muffin tin. BAKE at 350° for 18 minutes or until lightly brown. Source Patricia Parten Berry |
Hobo Beans
1 pound ground beef 1/3 cup onion, chopped fine 1 can stewed tomatoes 1 can pork’n’beans 1. Brown beef in skillet. When cooked and no pink is showing, drain off all fat by placing on folded paper towels to absorb the excess. 2. Place beef back in skillet, add onion and stir until onion is translucent. 3. Add tomatoes and stir until mixture simmers. 4. Add pork’n’beans and stir until beans are heated. Serve with cornbread muffins Source Patricia Parten Berry White Sauce
Ingredients Thin Medium Thick Margarine 1T 2T 3T Flour 1T 2T 3T Salt 1/2t 1/2t 1/2t Milk 1c 1c 1c Use a double boiler or a heavy sauce pan over low heat. Melt margarine. Stir together flour, salt and add to margarine. Make a paste. Add the milk slowly, stirring constantly. Cook until the white sauce is thick and smooth, continuing to stir. |
