Cakes and Cupcakes
BASIC CAKE RECIPE
1/2 c. butter
1 c. sugar
1 tsp. vanilla
2 eggs
1 1/4 c. flour
1 tsp. baking powder
Mix butter and sugar. Add vanilla and eggs; mix well. Add flour and baking powder; mix well. Bake in 350 degree oven approximately 25 minutes (8x8 pan).
To change flavor of basic cake:
Add:
3 tablespoons cocoa or
1 teaspoons cinnamon and 2 cups apples, chopped or
1/2 cup black walnuts or
1/4 cup butter, 1/2 cup brown sugar and 1 cup crushed pineapple mixed together in bottom of pan.
EASY GOOEY BUTTER CAKE
1 pkg. yellow cake mix
1/2 c. butter (do not use margarine)
1 egg
GOOEY BUTTER:
1 (8 oz.) pkg. cream cheese, softened
2 eggs
1 lb. box confectioners' sugar
1 tsp. vanilla
Mix together cake mix (just the mix, not the other ingredients called for on the box) with butter and 1 egg. Pat into an ungreased 9 x 13 inch cake pan. Cream together cream cheese, 2 eggs, powdered sugar and vanilla. Pour over cake mixture. Spreading to the edges. Bake at 350 degrees for 35 minutes.

1 (18.25 Ounce) spice or yellow cake mix
3 large eggs
1 (21 ounce) can apple pie filling
1) Preheat oven to 350 degrees.
2) Place cupcake papers in muffin tins
3) Place cake mix and eggs in bowl or mixer. Beat on medium speed for 2 minutes. (Will be very thick batter)
4) Add pie filling and mix until apples are chopped in small pieces. (Do not over mix. You will need to see apples in chunks.)
5) Fill muffin cups 2/3 full with batter.
6) Mix together:
1 Tablespoon sugar
1 teaspoon cinnamon
Sprinkle this mixture on cupcake tops before baking.
7) Bake at 350 degrees until wooden pick inserted in center of cupcake comes out clean. About 12 to 15 minutes.
8) Remove from muffin tins to cool. (The hot muffin tins will cause the cupcakes to over brown.)

WHITE TEXAS SHEET CAKE
1 cup Butter 1 cup Water 2 cups All-Purpose Flour 2 cups Sugar (white granulated) 2 Eggs, beaten 1/2 cup Sour Cream 1 tsp Almond Extract 1 tsp Baking Soda 1 tsp Salt FROSTING:
Pour into a greased 15-in. x 10-in. x 1-in. baking sheet. Bake at 375 for 20-22 minutes or until golden brown. Cool for about 20 minutes. FOR FROSTING: In a large saucepan, combine butter and milk. Bring to a boil. Remove from the heat, and then stir in sugar and extract. Stir until smooth and all combined. Spread over warm cake. Decorate cake with sprinkles, if desired. |
MISSISSIPPI MUD CAKE
Ingredients: 1 cup of melted butter (or 1 stick of butter and 1 stick of margarine) 2 cups sugar 1/2 cup unsweetened cocoa 4 large eggs (lightly beaten) 1 teaspoon vanilla extract 1/8 teaspoon salt 1 1/2 cups all-purpose flour 1 1/2 cups coarsely chopped pecans, toasted 1 (10.5-ounce) bag miniature marshmallows Whisk together melted butter and next 5 ingredients in a large bowl. Stir in flour and chopped pecans. Pour batter into a greased and floured 15- x 10-inch jellyroll pan. Bake at 350° for 20 to 25 minutes or until a wooden pick inserted in center comes out clean. Remove from oven; top warm cake evenly with marshmallows. Return to oven, and bake 5 minutes. Drizzle Chocolate Frosting over warm cake. TIP: Let these cool completely before cutting into squares! Chocolate Frosting 1 (16 oz) package powdered sugar, sifted 1/2 c. milk 1/4 c. butter, softened 1/3 c. unsweetened cocoa Beat all ingredients together with an electric mixer until smooth. HERE'S A TIP FOR THOSE OF YOU IN A HURRY: You can also use 2 (19.5-ounce) packages brownie mix instead of making the brownies from scratch. |
The Perfect White Cake
Ingredients
2 1/4 cups cake flour
1 cup milk at room temperature
6 large egg whites at room temperature
2 teaspoons almond extract
1 teaspoon vanilla extract
1 3/4 cups granulated sugar
4 teaspoons baking powder
1 teaspoon table salt
1 1/2 sticks unsalted butter, softened but still cool

Instructions
- Heat oven to 350 degrees. Prepare two 8-inch cake pans.
- Make sure milk and eggs are room temperature.
- Pour milk (I used skim) , egg whites, and extracts into medium bowl and mix with fork until blended.
- Mix cake flour, sugar, baking powder, and salt in bowl of electric mixer at slow speed. Add butter, cut into cubes and continue beating on low for about 1-2 minutes.
- Add all but 1/2 cup of milk mixture to flour mixture and beat at medium speed for 1 1/2 minutes. Add remaining 1/2 cup of milk mixture and beat for about 1 minute.
- Pour batter evenly between two prepared cake pans.
- Bake until toothpick inserted in the center comes out clean, 27 to 30 minutes.
- Allow cake to cool to room temperature.
- Frost cakes with favorite frosting.
