Lifetime Nutrition and Wellness
Overview:(1) This laboratory course allows students to use principles of lifetime wellness and nutrition to help them make informed choices that promote wellness as well as pursue careers related to hospitality and tourism, education and training, human services, and health sciences.

Appetizer Lab Recipes
Sausage Balls
1 lb. sausage
2 cups cheese
3 cups Bisquick
Mix all ingredients in large bowl until well mixed. This will take awhile! Roll into balls and bake on greased cookie sheet. Bake at 375º for 20 minutes.
Tortilla Rollups
1 package (8 oz.) Cream Cheese, softened
1 tsp. taco seasoning
1 can green chilies
Deli ham
12 Flour Tortillas
Beat cream cheese until smooth. Add taco seasoning, mix well. Spread mixture on each tortilla. Top with green chilies and deli ham single layer) Roll tortilla lightly. Place seam side down in airtight container. Chill at least twenty minutes. Slice each roll into 1-inch slices forming a pinwheel. Arrange on pate to serve.
Fried Pickles
In a small bowl combine:
½ cup cornmeal
½ cup flour
2 tsp. Salt
2 tsp. pepper
1 tbsp. Garlic powder
1 tbsp. cayenne pepper
1 tbsp. chili powder
In another small bowl combine:
1 egg
½ cup milk

Vegetable Oil for Frying
Slice pickles in small medallions. Next, dip pickles into liquid mixture and then into flour mixture. Place into fryer. Once pickles start floating on top of oil, remove and place on plate with paper towels to drain.
Salsa
1 large can diced tomatoes (undrained)
1/2 red onion
1 clove garlic
¼ c finely chopped cilantro
Juice from 1 lemon or lime
salt to taste
Chop and mix all - can use blender if want; let sit for 2 hours and taste, then make adjustment!
