EGGS BENEDICT
Poach 2 eggs (bring about ¼ inch water to a simmer in a small saucepan; break in eggs carefully; add lid and cook until whites are fully cooked and yolks are ‘blindfolded’) Heat 2 slice of fully cooked ham, using microwave, skillet, or broiler. Split 1 English muffin. Lightly butter the cut sides; toast under the broiler. To put together this dish, top each half of the English muffin with 1 slice of ham, and then one poached egg on top. Spoon over Hollandaise sauce. |
